柠檬烤鲈鱼

鲈鱼 500克、柠檬 2颗、葱 30克、姜 10克、食盐 5克、色拉油 15克、辣椒(红,尖,干) 1个、生抽(酱汁) 30克、清水(酱汁) 25克、幼砂糖(酱汁) 6克
烹饪步骤:
1.鲈鱼去鳞去内脏后冲洗干净;

2.用利刀在鱼背两边各划一刀;

3.将鱼放入容器中,两面均匀撒上盐;

5.柠檬用盐清洗表皮后,取其中一颗刨下皮屑,果肉一半切成柠檬角,一半挤成柠檬汁;另一颗切薄片;

6.葱姜洗净后分别切成段及丝;

7.将适量葱段、姜丝及柠檬角塞入鱼肚内;

8.淋上柠檬汁,静置15分钟;

9.锡纸折成盒子状,铺上葱段、姜丝及柠檬片;

10.将腌渍好的鲈鱼取出,沥干水份,并用厨房纸擦去鲈鱼表面水份;

11.将鱼放入锡纸盒内,鱼身表面刷一层油,铺上几片柠檬,撒上柠檬皮;

12.另取一张锡纸,盖在鲈鱼表面,并将四周包裹住;

13.入预热后的烤箱,160度,上下管,中层,烘烤25分钟;

14.烘焙过程中,做好酱汁;生抽、清水及幼砂糖混合后小火煮开,放凉即可;

15.撕去表面锡纸,倒除锡纸盒内的水份;

16.淋上酱汁;

1、柠檬的量依据自己喜好增减;
2、在鱼身上挤柠檬汁可以去腥,也可以用料酒代替。
