墨鱼是一种肉食性软体动物,虽然也叫鱼,但是它却属于贝类,味道鲜美,营养丰富。
今天我们就选用墨鱼仔,配上青红椒和洋葱炒着吃,墨鱼鲜嫩入味,下饭又下酒。
用料:
墨鱼仔,青椒,红椒,洋葱,生抽,红油豆瓣酱,糖,醋,蚝油,水淀粉,油。

做法:
撕去墨鱼仔的外皮,去除内脏,摘去头部。(到菜市场买的时候,商家一般都会处理好墨鱼,回家后,只要清洗一下就好了,不过价格会贵一点。)
将青红椒洗净后,切成滚刀块;洋葱去皮,洗净,切小块备用。

将墨鱼仔摊平,在上面打上花刀,这样做后,吃的时候更方便,而且会更入味。

锅内烧水,水开后倒入墨鱼仔焯水,待墨鱼仔打卷后捞出沥水。

倒去水,将锅清洗干净,加热烧干。倒入适量的油,放入青红椒和洋葱,翻炒均匀。

炒至青红椒和洋葱断生,随后盛入盘内,备用。

锅内留底油,下一点红油豆瓣酱炒出红油,倒入一点清水。

加一点糖、生抽、蚝油、醋调味,待锅内水不多的时候,淋一点水淀粉勾芡。
把烫好的墨鱼卷倒入锅内,翻炒均匀;最后倒入炒好的青红椒和洋葱,翻炒均匀即可出锅。
